Better-Than-Basic Green Salad

Divide the following in to 2 large bowls:

  • 8 large leaves of red leaf and/or romaine lettuce
  • 1/2 cup grated beets
  • 1/2 cup grated carrots
  • 2 or 3 sliced scallions or 1/4 cup sliced red onions
  • Quinoa or brown rice – cooked & cooled to room temperature - approx. 1/2 cup
  • 2 TBLS of sunflower seeds – soaked or toasted
  • 2 TBLS raisins
  • Dress liberally with Tahini Dressing
