- 1 package rice noodles – cooked to package directions al dente. Drain and cool with cold water.
- 3/4 cup shredded red cabbage
- 1 1/2 cups grated red beets
- 5-6 scallions - cleaned and chopped small or 1/2 cups chopped red onions
- 1/2 cup sunflower seeds – soaked or toasted – for garnish
- Ginger Miso Dressing
Toss all together.
Smother generously with Ginger Miso Dressing.
Serve immediately. (Does not keep well. Rice noodles get all weird and mushy.)
