Magenta Salad

Ingredients:

  • 1 package rice noodles – cooked to package directions al dente.  Drain and cool with cold water.
  • 3/4  cup shredded red cabbage
  • 1 1/2 cups grated red beets
  • 5-6 scallions - cleaned and chopped small or 1/2 cups chopped red onions
  • 1/2 cup sunflower seeds – soaked or toasted – for garnish
  • Ginger Miso Dressing

  Directions:

  1. Toss all together.

  2. Smother generously with Ginger Miso Dressing.

  3. Serve immediately. (Does not keep well. Rice noodles get all weird and mushy.)
