Super Duper Simple Rice
  1. Cook brown rice to directions.
  2. Add chopped scallions or red onions.
  3. Toss in some sunflower seeds.
  4. Cover with Ginger Miso Dressing.

 Best Fried Tempeh
  1. Cut tempeh into “fingers”.  Approx. ¾” by ¾” by 4”.
  2. Deep fry in organic sunflower oil until golden brown.
  3. Cover with Ginger Miso Dressing.

 Magenta Salad

Ingredients:

  • 1 package rice noodles – cooked to package directions al dente.  Drain and cool with cold water.
  • 3/4  cup shredded red cabbage
  • 1 1/2 cups grated red beets
  • 5-6 scallions - cleaned and chopped small or 1/2 cups chopped red onions
  • 1/2 cup sunflower seeds – soaked or toasted – for garnish
  • Ginger Miso Dressing

  Directions:

  1. Toss all together.

  2. Smother generously with Ginger Miso Dressing.

  3. Serve immediately. (Does not keep well. Rice noodles get all weird and mushy.)

Simply Awesome Smoked Salmon Salad

For each salad:

  1. Rip 4 large leaves of cleaned red-leaf lettuce.
  2. Add 1/3 cup grated carrots.
  3. Add 1/4 cup thinly sliced red cabbage.
  4. Top with approx. 1/2 cup of broken up smoked salmon.
  5. Dress generously with Ginger Miso Dressing.
